The Goulue Chocolatier was inspired by the famous Parisian cancan dancer, immortalized by Henri de Toulouse-Lautrec nicknamed "The Glutton", known in the Belle Époque as "The Queen of Montmartre". She quickly became famous for her self-confidence, extroversion and risky habit of emptying the glasses of customers in one gulp.
